Gansu Noodle Guide: 14 Cities, 14 Bowls of Flavor

When people talk about Gansu food, the first thing they usually mention is Lanzhou beef noodles.

But this video shows that Gansu’s noodle culture is much bigger than one famous bowl.

Across Gansu’s 14 cities and prefectures, every region has its own representative noodle dish. In Jiayuguan, 炮仗面 is thick, chewy, and full of stir-fried flavor. In Zhangye, 搓鱼子 has a special hand-shaped texture. In Jinchang, 拉条子干拌面 is simple, hearty, and satisfying.

Wuwei’s 三套车 is more than just noodles — it is a complete local food experience. Lanzhou beef noodles are the soul of the city’s breakfast culture, with clear broth, hand-pulled noodles, chili oil, beef, cilantro, and green garlic.

The video also highlights many unique local flavors: 白银大肉面, 定西热凉面, 天水浆水面, 庆阳烩麻食, 平凉饸饹面, 陇南棒棒面, 临夏河沿面片, and 甘南青稞糌粑.

What makes Gansu noodles special is the variety. Some are spicy and oily, some are sour and refreshing, some are served in rich soup, and some are mixed dry with sauce and vegetables. Each bowl carries the taste of its local land, climate, and people.

Gansu noodles are not fancy food.

They are real food — warm, handmade, filling, and full of life.
